Pea Fritter Recipe

Here we go with another (naturally Gluten Free) recipe to provide a little brunch inspo for you this morning:

Easy Pea Fritters

This recipe makes around 4 fritters 👇🏽

50g Plant S pea flour

1/2 tsp baking powder

Salt & Pepper to taste

1 medium egg, organic and free range

40g cultured coconut, plus more to serve

10ml water

100g frozen peas

1/2 fresh red chilli, finely chopped

Combine your dry ingredients - Pop your flour, baking powder, salt and pepper in a bowl. Mix well.

Mix together your wet ingredients - In a jug, loosen the cultured coconut with the water until smooth. Then crack your egg in and mix together until well combined.

Make your batter - pour the wet mix into the dry and stir until you form a smooth paste. Once combined, fold in your frozen peas and fresh chilli. Can't handle the heat? - leave the chilli on the side

Time to cook it up - Heat some oil in a pan over a medium heat and spoon your mix in four even circles. Push down gently so you level out the circles and they can cook evenly.

Watch for the bubbles - You will see little air bubbles start to form on the top of your circles as they fluff up. Check underneath the fritter for a golden brown colour - That's when you want to flip. Cook each fritter for around 6-7 minutes in total and then serve immediately.

They are best eaten warm straight out of the pan but work great as a cold snack too. Make sure you thoroughly cook the fritters before serving - they will fluff up nicely and be golden brown.

Let me know if you make these and what you think!!
